Sushi egg muffins

Like sushi in a muffin. I made these with leftover egg whites, but obviously using whole eggs would be great too. Makes 4. Per muffin: Cal: 95; Fat: 4.9g; Pro: 12.2g; Carbs: 0.6g

  • 5 Eggs, whites
  • 1 Eggs, whisked
  • 1 Nori sheet, crumbled
  • 90 grams can salmon (3 oz)
  • 1 teaspoon Sesame oil
  • 2 teaspoon Tamari or gluten free soy sauce
  • 1 teaspoon Butter, salted
  • 1 tablespoon Sesame seed


Preheat oven to 200 degrees. Blend all ingredients except the sesame seeds together. Pour into four holes of a muffin tin (greased or silicon muffin tin). Sprinkle with sesame seeds.

Bake for 20 minutes until risen and golden. 

Can heat warm or cold.
