Raspberry coconut cashew bites

Genuine sugar free, delicious treat to accompany a cup of tea or to make for a friend (or even take on a long training session). Makes 24. Per bite: Cal: 187; Fat: 18.6g; Pro: 1.8g; Carb: 2.3g

  • 1 cups Coconut butter, melted
  • 0.75 cups Coconut oil, melted
  • 0.75 cups Cashews, soaked for 2h and rinsed
  • 0.75 cups Raspberries, fresh or frozen
  • 2 teaspoon Vanilla extract (sugar free)
  • 0.5 cups Coconut butter, melted


Line a loaf or baking tray with baking paper. Blend together the first portion of melted coconut butter, coconut oil, cashews, raspberries and vanilla extract. Press into baking tray and set in fridge to firm up (or not!) Top with the melted coconut butter and then pop into the fridge. Cut into 24 pieces. Keep in freezer or fridge.
