Whole roasted cauliflower

The picture does NOT do this justice. It was delicious alongside Middle Eastern spicy mince and falafel - we also served it with homemade hummus. Serves 6. Per serve: Cals: 113; Fat: 9.8g; Pro: 2.6g; Carbs: 2.3g

  • 0.25 cups Coconut oil
  • 2 teaspoon Garlic powder
  • 1 tablespoon Ground cumin
  • 1 tablespoon Ground coriander
  • 2 teaspoon Smoked paprika
  • 1 teaspoon Salt, Himalayan
  • 3 tablespoon Lemon juice


Preheat oven to 180 degrees and line a baking dish with baking paper.

Melt the coconut oil in the microwave or over the stove on medium heat.

Add all spices and salt and lemon juice and mix well until blended.

Use a pastry brush to evenly distribute the mixture over the cauliflower.

Pop in oven and cook for 45-55 minutes, depending on the heat of your oven.

Serve with other delicious foods, such as homemade hummus.
