Chocolate nut bars

Super easy to make, energy dense and a good lunchbox filler for your active kids - this isn't sweet but has a touch of honey added. Makes 24 bars. Per bar: Cal: 131; Fat: 12.3g; Pro: 2.8g; Carbs: 2.5g

  • 0.5 cups Oil, coconut
  • 0.25 cups Cacao powder
  • 2 tablespoon Peanut butter
  • 1 tablespoon Honey
  • 0.5 cups Coconut, desiccated
  • 1 cups Raw almonds
  • 1 cups Nut, pistachio, raw


Line a loaf tin with baking paper. Melt the coconut oil in the microwave or on the stove top, then transfer to a small blender and add the cacao powder, peanut butter and honey and blend until well mixed. Add the coconut, almonds and pistachios and pulse a couple of times. 

Transfer into loaf tin and pop into the refrigerator for at least 3 hours to set. Cut into 24 bite-sized bars. Keep in fridge or freezer.

(If you don't have a blender, then instead whisk the coconut oil, cacao powder, peanut butter and honey until well mixed. Place the nuts in a bag and use a rolling pin to gently break up - not until like crumbs, but just so they are roughly chopped. Place in the cacao mixture with the coconut oil and mix to combine).
