Line a loaf tin with baking paper. Melt the coconut oil in the microwave or on the stove top, then transfer to a small blender and add the cacao powder, peanut butter and honey and blend until well mixed. Add the coconut, almonds and pistachios and pulse a couple of times.
Transfer into loaf tin and pop into the refrigerator for at least 3 hours to set. Cut into 24 bite-sized bars. Keep in fridge or freezer.
(If you don't have a blender, then instead whisk the coconut oil, cacao powder, peanut butter and honey until well mixed. Place the nuts in a bag and use a rolling pin to gently break up - not until like crumbs, but just so they are roughly chopped. Place in the cacao mixture with the coconut oil and mix to combine).
