Chocolate chia truffles

A rich chocolate treat with no added sugar. Perfect for anyone who is nut-free. Makes 16. Per truffle: Cal: 67; Fat: 3.6g; Pro: 3.7g; Carbs: 4.3g (of which 3g is fibre).

Ingredients

  • 25 grams Chocolate protein powder
  • 0.25 cups Chia seeds
  • 0.25 cups Unsweetened cocoa powder
  • 0.25 cups Cacao nibs
  • 0.5 cups Coconut flour
  • 1 teaspoon Unsweetened vanilla extract
  • 0.25 teaspoon Salt, Himalayan
  • 0.75 cups Milk

Instructions

Mix the dry ingredients together, then add the milk slowly, ensuring it is absorbed into the mixture, it can be a little bit wet at this stage. Leave the mixture for around 10 minutes to allow the liquid to absorb into the mixture.

Line a tray with non-stick paper. Use a tablespoon to fashion balls out of the batter, making 16 fairly small truffles.

Keep in refrigerator.

 

*I used Two Islands protein powder. There are many good brands out there - some others include Clean Lean Protein, RAW protein powder, Balance Natural Whey, Vital Protein powder.

* Use any milk you like here. If not nut free, use almond milk. Otherwise dairy milk, rice milk, oat milk, cashew milk is all good.
