Three ingredient cookies, no added sugar. I've used coconut butter, peanut butter and protein powder to sandwich them together. Makes 12 single cookies. Per cookie: Cal: 84; Fat: 5.8g; Pro: 2.9g; Carbs: 3.7g
Preheat oven to 170 degrees Celcius and line a baking tray with non-stick paper. Coat with a little melted coconut oil.
Mash the banana down to a puree and add the ground LSA powder and cocoa powder and mix until well blended (may need to sift the lumps out of the cocoa powder). Alternatively, pop all ingredients into a food processor and blend until well mixed.
Use a tablepoon to measure out mixture and, wetting your hands so they don't stick, make balls to pop on the baking tray. Flatten down with a fork.
Bake in oven for 10-12 minutes until cooked (but not crisp). Remove and let cool.
At this point, I put 2 Tbsp peanut butter, 2 Tbsp melted coconut butter and 2 Tbsp vanilla protein powder in a small bowl and mixed until well blended, then sandwiched these together and popped into the fridge. Entirely optional (not included in the nutritional information above).
