Cashew blueberry bites

These are tasty little morsels - the coconut butter with a hint of honey make it a sweet treat, so a little goes a long way. You could easily leave the honey out though and it would still taste lovely. Makes 24 bite-sized pieces. Per piece: Cal: 150; Fat: 13.7g; Pro: 1.8g; Carbs: 4.7g

  • 0.5 cups Cacao butter
  • 0.5 cups Coconut butter
  • 0.25 cups Almond butter
  • 1 teaspoon Vanilla powder
  • 1 tablespoon Honey
  • 1 teaspoon Salt, Himalayan
  • 0.5 cups Pam's dried blueberries
  • 1 cups Nut, cashew, raw


Line a loaf tin or similar with baking paper. Set aside.

Melt the cacao butter and coconut butter in the microwave (~2 - 2.5 min) or over a double boiler on the stove over medium heat until melted.

Add the cacao butter, coconut butter, almond butter, vanilla powder, honey and salt to a bowl and mix thoroughly until blended. Add the blueberries and cashews and mix through. Transfer into the loaf tin and pop into the refrigerator for at 2 hours or until set. Cut into 24 pieces.

*Coconut oil can be used instead of cacao butter (it may melt a bit!) and any other nut butter for the almond butter. The coconut butter is quite sweet, and while it can be swapped for coconut oil, it won't be as sweet - not necessarily a bad thing. Honey is optional.
