Line a loaf tin with baking paper.
Melt half of the coconut butter in the microwave until liquid. Grate ginger.
Blend beetroot, almond butter, the melted coconut butter, protein powder, grated ginger, cinammon and salt together until well mixed.
Decant into the loaf tin and press into place, making it even across. Refrigerate.
Mix the second half of the coconut butter together with the juice and zest of the orange.
Pour over the beet and berry mixture. Refrigerate. Cut into 20 pieces.
I used doTerra essential oils for the ginger, cinammon and orange flavours here. If using essential oils, ensure they are of good quality.
