Most of the prep time is waiting for the chia seeds to swell. You could make this in the evening and enjoy the next morning. Serves 1. Per serve (including two hard boiled eggs): Cal: 425; Fat: 29g; Pro: 21g; Carbs: 16g
Bring a small pot of water to boil on the stovetop. Once it is boiling, carefully place two eggs in it and set the timer for 6-7 minutes depending on how you like your eggs (soft or hard boiled). Once the timer has gone off, switch stove off, drain the hot water and rinse a couple of times in cold water to stop the eggs from cooking.
Meanwhile, peel the courgette. Place it alongside all of the remaining ingredients in a food processor and blend until smooth.
Pour into a bowl, and you can either eat immediately or wait 5-10 minutes for chia seeds to swell and for mixture to thicken.
Eat your yummy smoothie bowl, then enjoy the eggs alongside this. A complete awesome breakfast IMO ;-) .
